Lunch is my favorite meal of the day!
Depending on my mood, I like to either have a very filling lunch with a ton of leafy greens or something lighter like a smoothie with some healthy snacks. Below are some ideas:
Mixed Veg Salad – I like to use seasonal veggies when making a hearty salad. As it is winter, I like to create my salads with kale, quinoa, roasted chickpeas, feta cheese, cherry tomatoes, cucumbers, pumpkin seeds for crunch, and the dressing I have been loving lately is the ginger dressing from Trader Joes. Protein is always important! I have been trying to stray away from animal protein and have been eating more seitan and tofu.
Smoothie time! – Who doesn’t like smoothies? It all depends on your preferences in what you want to throw in the blender but I always make sure to use protein powder and throw in some chia seeds. Dates have taken my smoothies to a new level with its sweetness and nutritional benefits.
Snacks/Sides – I’m not sure why but snack time is a close second to my favorite meal even though it is not technically a meal (or is it?). Cutting up and putting sweet potatoes in the air fryer is the ultimate salty and sweet snack. And let me tell you, put peanut butter and blueberries on a rice cake and it will change your life!
